Special tea leaves from Kashmir is brewed in which baking soda, milk and cardamom is added to make this delicious tea . The tea is a great during the winters and can be served along with Kat lam,bakirkhani,kulchas to make your evening better.

How to get a perfect purple tea extract commonly known as (TUTH) A BITTER TEA EXTRACT,HOW TO GET PERFECT SAMAWAR like pink tea(A samovar is a traditional Kashmiri kettle used to brew, boil and serve Kashmiri salted tea ( Noon Chai) and kahwa. .)
So hear I unveil the secret.
INGREDIENTS NEEDED.
A good quality of kashmiri noon Chai leaves,if u reside in Srinagar u can find a good quality of NOON CHAI FROM DOWNTOWN AREA MAHRAJGUNG POPULARLY KNOWN AS "GUNWANI"
2. FRESH MILK.
3.SALT TO TASTE
4BAKING SODA
PREP. QUANTITY DEPENDS ON NO OF PPLE UR SERVING
FOR 5 PPLE
ADD 2 CUP OF HOT WATER IN UTENSIL MADE UP OF COPPER
TO THIS ADD 4 TEASPOON OF NOON CHAI LEAVES &3 pinch of baking soda to it.
LET IT BOIL ,TILL IT GET REDUCED TO 80%.NOW HERE THE TRICK MATTERS.NOW ADD ICY COLD WATER TO IT ..TO REDUCE THE BITTERNESS,FIRST ADD 2 GLASSES OF ICY WATER THEN GIVE IT BOIL ,THEN
With help of "Choncha (a medium cooper made utensils) used for pouring toss this extract as many times as u can to get a perfect purplish extract.
Check its bitterness wtr to add more water or not.
Now add milk to it.and check its color
Now Add salt to it.
Let it simmer for 20 mints on low flame
Add pinch of sugar to it to get perfect samovar like aroma &taste.
Now u can enjoy the perfect pink noon Chao with kulcha,Bakikhani or Patti.
Note: initially follow less hot water &more tea formula 2:3 ratio
Use icy cold water for dilution
Sugar add aroma to it
Simmer it to get perfect taste.but then u have to keep very little salt BC oz simmering increases salt concentration.π
