( Lamb meat cooked in spices full of aroma)
 Nothing is impossible till u give a nice try to it,try it &have it©sherryk.
Introduction:Most of our kashmiri cuisine is much inspired from  central asia..from pullav to zaffrani harisa..to kalapach to mutton rogan josh .so lets cook some signatory recipies of kashmir with our normal home made spices!
Mutton Roganjosh....
the Term ROGAN IS A PERSIAN TERM CALLED "colour" & JOSH .means "heat" ...so the gravy is simply a red color gravy with lots of spices added to lamb meat... This recipe is basically having a Persian  origin nd had occupied great place as far as kashmiri cuisine is concerned ,no function is complete without this #Recipe

 Ingredients:1 kg fresh lamb meat
Onions 4 medium to large size
Oil/Ghee  2cups
Shallots (pran) fried 1 spoon(paste)
Salt as per taste

 Kashmiri red dageee Mitch
4cloves
 Large &small cinnamon (2)
Cardamom (4)
Ginger /garlic: 4 bulbs
 Method:
Put fresh meat in utensil and add garlic,ginger,and water to it ...&let it simmer till meat gets soften ( u can also make use of cooker) in case u don't have enough time.
 Then chop the onions and fry it in oil. Till it turns golden brown ..then put it into mixi  nd add few spoons of lamb stock to it..this will give u onion paste same should be done with shallots( shallots or pran add extra aroma and flavour to ur dish)
 Then get a large bottom size utensil and add onion +shallots paste to it ..let it fry more keep adding few drops of pee cooked lamb stock to it  then add soften meat to it  keep on  moving the spatula so that it does not get burnt...then slowly add all the spices  except chilli... Sauté it till meat also turns brown keep on adding lamb stock to it,after it releases oil from side of the pan, add chilli powder ,SALT to it nd let it simmer again... Add requisite amount of stock to it ..and serve it with rice...
Note: instead of all the dry spices I just added 2 balls of Sherry bombshell mix spices..to make it more quick nd Hassel free. Nd it shld me noted that rogan josh gravy is thick..its not  what we call in kashmiri RAS....WHICH US THIN ...)
