Bitter gourd or bitter melon as it is called has always been a neglected food among a large part of the population may be bcoz of its bitterness but onces it's cooked well we can't resist ourselves from its healthy benefits
Let us today cook a Royal Recipe .. Know as Bitter gourd stuffed with minced meat...yup "Royal Recipe" bcoz it needs lots of investment in terms of patience nd hardwork.
So let's us Begin
Cooking time 1 hr...( Prior if u have some prerequisite) like, washed bitter goud which is d most toughest part of the recipe a single bitterness can spoil the whole recipe,
minced meat, fried shallot paste,
Ingredients:
Fresh green medium to large size bitter goud atkest 2kg
Minced lamb meat for filling.
Shallot paste
Ginger garlic paste.
Turmeric
Corinder powder
Cumin powder
Garam masala
Fennel powder
Tomatoe paste
Curd (optional)
Salt to taste
Dry fenugrrek leave(optional)
Mint leaves(optional)
Oil
Ghee.
Prep for cleaning bitter gourd.
To remove all bitterness from bitter gourd(kerala)
First peel off outer layer. Then open it nd remove it's seed.. The inner part is were most of the bitterness is present so take a sharp knife nd keep on scratching till white milky fluid comes out. Nd the bitter gourd turns almost transparent.
Keep in mind not to chop we hve to clean it in such a way so that we can fill inside with minced meat.
Then wash it thoroughly to remove all the white and soapy water.while washing u can use knife nd keep on scratching this will remove every inch of bitterness from bitter gourd. Then add salt nd turmeric to it nd keep it for atkest 30 mint then wash it again nd remove all the excess water..
2.minced meat. Take fresh lean meat ne minced it.do not over minced it .
Now add meat masala to it nd mix it well. Keep it aside.
Prep for main Recipe.
. Now heat oil in pan
Now take one kerala (bitter gourd ) nd fill it with minced meat.
3.Now tie a thread around each filled kerala. So that stuffed should not come out of it while frying.
4.now when oil is very hot deep rey the bitter gourd.
5.fry them till they turn golden brown.
For Gravy.
Take the same deep fried oil nd add cumin, onion, gi ger garlic paste and bay leave to it nd fry it when onion is fried add little water and saute itadd red chill powder, turmeric, coriander, fennel powder to it to add little tangy nd spicy flavour we can add 1 tablespoon of yogurd and 1 table spoon of tamato sauce nd add shallot paste nd let it cook till oil is released from sides of the pan. Now u can add fried keralas into it and carefully mix it with gravy add salt to taste
Then put the cooking vessel into steamer mode (atlest 4_5 whistle) so.
Now njoy this finger licking Royal Recipe with Rice
Note. U can add cashews paste also in gravy to make it extra rich.
Incase u don't hve shallots u can add fried onion paste.
This is very priced recipe in terms of quantity. So cook it only when u hve 2 things 'patience + money.. 🤑
