Mutton walnut Gravy/Shorba

 They say that there are moments that open up your life like a walnut cracked, that change your point of view so that you never look at things the same way again. ...

It took me at least 3 long years to study each &every ingredients to create an appropriate Chemistry between rich creamy flavor of walnut with Mutton &Mint.I can bet  that u will never see this delicacy of  Mutton again,if u never cook in this style then next time u don't deserve to be in KITCHEN.🤪

Let me introduce u with my all new recipe 4 Today "MUTTON WALNUT GRAVY / SORBA/GOSH.

Talking about its taste ...it taste like creamy buttery little tangy ,with freshness of mint 🥦

 INGREDIENTS

1/2 KG LEAN MUTTON

WALNUTS : 1CUP MEDIUM SIZE BOWL.

FRESH MINT LEAVE. PASTE 1/2 CUP

CUMIN SEEDS: 1 TABLESPOON

YOGURT: 6 TABLESPOON.

SALT AS PER TASTE

GINGER GARLIC PASTE.

Turmeric powder1 teaspoon

FENNAL POWDER 1 teaspoons

Lemon juice 6-7 drops

Nutalite butter./GHEE

SAFFRON TWINGS 2-4 BOILED IN 1 CUP OF HOT WATER.

Prep.of Walnut gravy.

Put walnut in blender,add yogurt,,salt cumin seeds,lemon juice ,fresh mint paste and blend it  well.

2.Now in a pan add 1tablespoonof  nutalite/ oil,add Ginger / garlic paste to it,now saute the above blended paste in this nutalite butter/ghee.for at least 5-8 mint.

For  Tendering  Of  Meat:

Take 1/2 kg of fresh lean mutton meat.

Put in to a utensil ,add turmeric 1 teaspoons,1 teaspoon on fennel powder,saffron  2-3 drops  addlittle bit of salt,ginger garlic paste.and boil it till meat gets tender

Onces it is done put the tender meat in walnut gravy 

Let it cook for another 25-30 mint till u get a nice thick creamy paste &it start releasing butter from all sides.

Garish it with fresh mint leave or walnut ,&indulge into finger licking creamy and buttery flavor of walnut ,it taste yummlicious with Naan / Chapati.

Note: don't over cook the walnut gravy

Don'tover blend the walnut,it should be little granular.

If u want rich creamy flavor of walnut first put it in to hot water keep it for 10 mint &then blend it.

Balance the level of salt properly,as walnut itself  having  little salty taste.
