IntroductionThe winter of Kashmir is cold and long and people of Kashmir have developed their unique traditions of coping with it – one of them is consuming dried vegetables in place of unavailability of fresh food products.

Hokh Syun has attained the position of a well-regarded local cuisine, which people from all walks of life consume and enjoy. During the heavy snowfall in the valley which led to the closure of Srinagar-Jammu national highway, many people who had stopped storing the dried vegetables, have now planned to store Hokh Syun so that they won’t face any shortage of such eatables in coming winters.

 The various varieties of Hokh Syun include Dried Tomatoes (Ruwangan Hache), Bottle Gourd (Al-Hache), Pears (Tang Hache), Apple slices (Tchoont Hache), Lotus stems (Nader Hache), Fishes (Hokh Gaad or Hoggard), Brinjal (Wangan Hache), Turnip slices (Gogji Hatche or gojiii patir), Spinach (Hukh Palak) and the forest herbs (Jungle Handh).

Of the Kashmiri Hokh Syun, sun dried turnips (GOGIJI PATTR)make a drool-worthy dish which is a delight to any vegetarian’s taste buds!

Ingredients;

Sun dried turnip(Gogji Patter)

Oil

Turmeric:2teaspoon

Redchilli powder: 1teaspoon

Coriander powder:1 teaspoon

Ginger powder;1 teaspoon

Garlic :4-5 buds

Cumin seeds;2teaspoon

Cloves1-2.

Fried shallots/pran: 1 teaspoon

Salt as per taste.

Method.

1.clean the sun dried turnip and remove all the residue from it.

2.then boil it for 5mint

3. Wash it will cold water,so most of raw smell is gone(mostly 3 washes)

4.Now Heat the oil in cooker,put cumin,clove to it.

5.Then add washed sun dried turnip to it,add salt,garlic  to it&let it fry

6.when it turns glossy green add rest of spices.

7.when it start releasing oil from sides,it means its all done now add 3 glass of water & cover the lid of cooker 3-5 whistles.

And ur Mouth watering MAS GOGIJI PATTR IS READY TO SERVE WITH RICE .
