"Mutton lemon zest cuba"( with deep frozen effect)❄π
Lemon zest:π zest means outer peeling of lemon either fresh or dried,depends upon availability..
Basically every citrus fruit can serve best ingredient for any nonveg tangy recipe.
Deep frozen effect: deep freezing meat is easy to cook,bcoz chilling effect denatured the protien nd tissue..it makes meat ready to cook nd soften its too.ππ»+ freezing seals all the meat flavor within.π
So here we go for our " Mutton lemon zest Cuba.

Ingredients needed:1kg boneless mutton
Lemon zest/or dried lemon: two
Dry spices
1.cummin powder
2.haldi...1teaspoon
3.red chill I powder 1 tablespoon gt
4.ginger garlic past
5.nutmeg 1.
6.staranis1.
7.clove.3
8.coriander powder 1 teaspoon.
9.oil .2 tablespoon
Salt as per taste
If u have whole Garam ma'sala,or Shaan meat ma's ala it can easily replace above8 ingredients..{.but for redchilli I opted home sun baked red chillies then rost it nd made paste out if while mixing with hot water.}
For garnishing
Chopped green chillies
Fresh mint( optional)
Fresh parsley (optional)
Preparation: cut the fresh boneless mutton into cubes ,place it in zip lock bag,nd deep freez it for 6-7 hrs.then remove it and let it cool at room temperature or till it gets loosen
Then place these cube in to non stick frying pan first add salt nd cumin seeds sonthat meat releases all its juices onces meat changes its colour,add 2tablespoon of oil to it,then add turmeric powder first in oder to release turmeric flavor nd color .,add lemon zest or dried lemon it will be good if u add dried lemon powder to it...then add rest of the spices except red chilli paste..
Onces the oil starts releasing from edges of the pan ,add chilli paste ..nd cover the lid till all the moisture content gets absorbed...no need to add water ,as we hve to cook this meat in its own stock....
Onces all the spices start releasing from edge of the pan..ur tangy masla mutton masala zest is ready to serve.
U can have it with plan rice or roti.
Or simply place it inside the roll...
I wld prefer to customize it by placing a layer of mozeralla cheese inside roll ndbthen fill it with tangy stuffingππ€€π€€π€€π―π―
