NARGISI KOFTAY(EGG WRAPPED IN MINCED MEAT WITH CREAMY GRAVY)
Nargisi Koftay (Egg Kofta Curry)
🥚 Ingredients
For Koftas:
Boiled eggs – 4–5
Minced meat (keema: mutton/chicken) – 300 g
Onion (finely chopped) – 1
Ginger-garlic paste – 1 tbsp
Green chilli (finely chopped) – 1
Coriander leaves – 2 tbsp
Red chilli powder – ½ tsp
Garam masala – ½ tsp
Turmeric – ¼ tsp
Salt – to taste
Oil – for shallow/deep frying
For Gravy:
Onions (paste) – 2 medium
Tomatoes (pureed) – 2
Ginger-garlic paste – 1 tbsp
Yogurt (whisked) – ½ cup
Red chilli powder – 1 tsp
Coriander powder – 1 tsp
Turmeric – ¼ tsp
Garam masala – ½ tsp
Chana powder
Almond powder
Corinder powder
Rice powder (basmati rice).
Oil or ghee – 3 tbsp
Fresh cream (optional) – 2 tbsp
Water – as needed
Salt – to taste👩🍳 Method
1. Prepare Koftas
Peel boiled eggs;
Mix keema with onion, ginger-garlic paste, chilli, spices, salt, and coriander.channa powder rice powder almond powder
Wrap keema mixture around each egg half, shaping into oval koftas.
Fry until golden brown. Keep aside. (Frying here is totally optional u can directly add kofta into gravy without our frying to keep it more moist nd juicy )
2. Make the Gravy
Heat oil/ghee, add onion paste; cook till golden.
Add ginger-garlic paste, then tomato puree; cook till oil separates.
Add spices and yogurt slowly, and cashewnut paste.stirring well.
Add water to get desired consistency; simmer 8–10 minutes.3. Assemble
Gently add fried koftas to the gravy.
Cook on low flame for 5 minutes.
Sprinkle garam masala and add cream if using.
